In Southeast Asia and China, bird's nests have long been considered highly nutritious and beneficial to health. Historical records suggest they were particularly prized among royalty and nobility as a symbol of beauty, vitality, and health.
However, bird's nests remain largely unknown to the general public. For many, they are shrouded in mystery and urban legends rather than direct experience or scientific understanding. Very few Japanese people have actually seen a real bird's nest, and even fewer have eaten it.
This chapter will go beyond mere folklore and curiosity, examining bird's nests from a scientific perspective. Based on the latest academic findings, we will clarify their composition, nutritional properties, biological role, and safety.
